Oat & Spelt Cinnamon Raisin Bread

Time for another Weigh In! 

Today's heavyweight is Spelt & Oat Cinnamon Raisin Bread!

Here are the specs:

Ingredients

1 Tbsp. Active Dry Yeast

1 1/2 Tbsp. Turbinado Sugar

1 1/4 Cup warm Water

1 1/2 Tsp. Sea Salt

1 1/2 Tbsp. Vegetable Oil

1/4 Cup Rolled Oats

2 Tbsp. Sprouted Grain Cereal (Ezekial)

3 Cups Spelt Flour

Yes, that's my butter. :) Method:

In large bowl mix yeast, sugar and warm water.  LEt rest for a few minutes, until bubbly.  Stir in remaining ingredients.  

Turn dough out and knead until smooth.  Place in an oiled bowl and cover with a clean towel. Let rise until doubled. 

Punch dough down and roll out into rectangle.  Sprinkle with cinnamon, sugar (optional), and raisins.  Roll dough up and place in oiled loaf pan.  Cover and let rise again until doubled.

Brush with egg wash.  Sprinkle some additional oats.  Bake at 425 degress for approximately 25 minutes.
