It was a rainy night in Jersey City, but that didn't stop Chris Siversen and his team at Maritime Parc from shining. The Ultimate Getaway, a dining event, hosted by Aston Martin Summit | Short Hills and Maritime Parc, featured a wine-paired, four-course chef prix-fixe that showcased Siversen's mastery of color, flavor and texture.
The meal began with a delicate amuse bouche of hamachi, concord grapes, yuzu and trout roe, paired with a crisp Domaine Dirler-Cade Riesling Spiegel, complimentary with pear and peach notes.
The next course was a gnudi like no other. A trio of luxurious ricotta gnudi, were dressed in a flavorful kale and pumpkin seed pesto. The dish picked up a touch of autumn sweetness from the spiced pumpkin, and a bit of texture from a chiffonade of crispy kale. Paired with Chateau St. Jean Robert Young Chardonnay from the Russian River Valley in Sonoma, it was perfection!
The gnudi were followed by perfectly seared Barnegat sea scallops with a crispy slaw of brussels sprouts, pickled mushrooms and a miso foie gras beurre blanc. This was paired with Etude Pinot Noir.
The third course, a tender duck breast accompanied by smooth, caramelized salsify, fall greens and roasted pears, was beautifully paired with Penfolds Bin 389.
Dinner wrapped up with a decadent dessert by John Sauchelli. A smooth caramel mousse, with crispy feulletine, dripping in a smoked whiskey caramel, sprinkled with candied pecans. With a sip of Beringer Nightingale, the evening was complete!
Maritime Parc has long been one of my favorites, the ambience, the service, the cuisine, and certainly the view, never disappoint. If that wasn't reason enough to go, Maritime Parc is offering Oyster & Burger Thursdays for $20. It really can't get much better! Maritime Parc's burger was voted #1 of the 10 Best Things to Eat in Jersey by the Villiage Voice. Thursday night it is!
