Malaga Sunrise Cocktail

by Melody Kettle

If you're not the type to run outside and try to fry an egg on the extraordinarily hot pavement, there are other heat wave activities that can be just as much fun - like sipping cocktails!

I recently mixed up a pitcher of a very fresh, very tropical libation my husband named "Malaga Sunrise." Mix up a pitcher this morning and enjoy it by this afternoon. Here's the recipe:

1 Bottle (750 ml) white wine (preferably Vin D'Alsace)

1/2 cup sugar

1/2 cup water

1 tsp vanilla extract

3/4 cup Galliano

Juice of one fresh orange

Zest of two limes

1 cup tonic water

Cubed watermelon and mango

Sliced limes

Combine sugar, water, and vanilla extract in a small pot. Bring to a boil and stir until sugar is dissolved.

Meanwhile, combine wine, Galliano, fresh juices and fresh fruits in large pitcher. When the vanilla syrup has cooled, add to pitcher and chill for two hours.

Before serving, add 1 cup of tonic water to the pitcher.

To serve, fill a glass with ice, pour and imbibe!
