The Charm of Ancient Culinary Tools

Every time I visit my grandmother, I leave with some fantastic culinary relic. Maybe a Vornado hand blender, an old rolling pin, a salt box, a cast iron popover pan, or a wall mount coffee bean grinder. 

Most recently, I acquired a manually operated, clamp-to-the-counter, Cavatelli machine. 

Grandma called me to basement.  She opened the narrow door to the tiny room under the stairs, and a pulled a ribbon that hangs from the ceiling to turn on the single light bulb.  She grabbed a box from the shelf, “Look at this,” she said and handed it to me, “do you want it?”

It took me a moment to process what was in the rectangular, blue and white cardboard box.  I soon realized and said, “Yeah! This is great!”

“Where did you find this?” I asked.

“At a yard sale for $2. How could I leave it there?”

I’m glad she didn’t leave it there, as I now have a new-old toy. 

I have a hunch that this new-old toy will outlast many of my newly manufactured toy. To that end, Grandma and Grandpa have been making toast with the same toaster for the last thirty years, while I have purchased, and disposed of, at least four toasters in the past eight years.

Also worthy of note, Grandma has been using the very same, manually operated, spice mill for fifty years! I've had my electric mill for five years, and it’s on the fritz.  KitchenAid stand mixers? Forty years plus for Grandma, I’ve already had to replace the "Professional 6" I purchased in 2003.

Nonetheless I now have a reliable, sturdy, old, Cavatelli maker.  So now, I need a reliable, old recipe.  Have you ever worked with a cavatelli maker?  Do you have a great cavatelli recipe you'd like to share?


Fresh From Harvest Table in Newark

Montclair resident, Carissa Borraggine, owner of Harvest Table Fresh Food Eatery, 127 Halsey Street, Newark, was recently awarded the Outstanding Small Business of the Year, by the Greater Newark Enterprises Corporation. 

Borraggine, who does not have any official culinary training, has worked in the restaurant industry since she was fourteen years old at places like 50s-style soda pop shops, to fine dining establishments, and food sales and distribution.

Carissa, who seems to be something of a old-world throw back, has always been passionate about healthy living.  She has practiced yoga for nearly fifteen years, and recently began teaching last year at Lotus Yoga Newark, sister studio to Lotus Montclair.

Montclair Makes New Friends - Cafe Amici!

This just in from Church Street!  The ideally located, and strikingly cavernous space  at 32 Church Street will be the new home of Café Amici Montclair. 

The restaurant is owned by Carmine Fanco, and operated by his son Albert Franco, who has been in the restaurant business for ten years.  If the name Café Amici rings a bell, that’s because the Franco family also operates the thriving, Italian influenced, Café Aminci in Ho-Ho-Kus. 

Albert Franco also owned Café Amici in Wyckoff, since 2002, and has recently sold the spact to his nephew, to open this location in Montclair.  They are confident and optimistic about opening shop in Montclair.  According to Albert,  “We look forward to the cultural diversity that Montclair has to offer, and I think our menu appeals to many tastes.”

Café Amici Montclair is due to open the week before Labor Day, and will essentially be a duplicate of the Ho-Ho-Kus location, offering an eclectic menu in a sleek, contemporary, urban atmosphere.

The kitchen will be headed up by Montclair resident, Chef Marco Damico.

The space was formerly occupied by 32 Church, which papered its door and windows this past May.

 

 


Nicolo's Bakery: A Family Affair

Anyone with a faint nose for gastronomy knows when they’re near a bakery.  I do; I grew up working in a wholesale bakery in Hackensack. So when we shot a video at Nicolo’s Bakery, it was trip down olfactory memory lane. 

Among foodies and bread enthusiasts, Nicolo’s has established serious “street cred.” Nicolo’s is not a new-age gluten-free type of bakery; it’s an old world Italian bakery.  The building, located at 6 Baldwin Street in Montclair is 115 years old, and was originally outfitted with a coal-burning oven.

Nicolo Zecchino purchased the space in 1967 and has been turning out stellar, crusty, tasty, authentic Italian-bread since then.  Eventually, the Zecchino family expanded the operation, adding prepared foods and a deli menu.
