Hot From The Kettle ™ International Food Episode will air on November 29 on Montclair TV34 at 10 am. 

Follow us to down Bloomfield Avenue as we visit Marrakech of Montclair and enjoy Lamb Tangine with Prunes, in the lounge room with veteran food blogger, Jason Perlow. 

Then we're off to Mesob Ethipian Restaurant to learn about Ethiopian food culture and make Injeta, the traditional bread of Ethiopia, that conveniently doubles as a utensil. 

Our final stop along our International Bloomfield Avenue Food Crawl is Aroma Palace.  We go into the kitchen for a demonstration of tradtional Indian Dosa and Chicken Tikka Masala. 

Finally, we take leave of Bloomfield Avenue and visit Corrado's Family Affair in Clifton.  Whether your seeking Mums or  Macedonian wine Corrados has it all.

Hot From The Kettle™: Corrado's Family Affair

I recently spent a morning walking through Corrado’s in Clifton, with manager, Domenic Scalia. Specialty ethnic items abound at Corrados.

We began, of course, in the cheese department. Corrado’s makes it’s own fresh ricotta ($3.99 lbs), which works brilliantly for homemade ravioli. They also carry the pear shaped imported cheese, Caciocavallo, and mozzarella’s drier doppelganger, Scamorza. Beside the cheese is an ample heap of cured meats, including Italian and Hungarian salami.

Hot From The Kettle ™: Connecting with Michael Carrino

Last week I visited Chef Michael Carrino, owner and chef of Restaurant Passionne, 77 Walnut Street, Montclair.

Chef Carrino prepared two outstanding seasonal selections. The Chef began with an Andouille Sausage & Oyster Dressing/Stuffing. The stuffing was moist and bright, the oysters were tender, and combined brilliantly with the smoky, yet subtle, Andouille Sausage. It was spot-hitting good!

Next, Carrino whipped together his own seductive, dark rum and Tahitian Vanilla laced Drunkin’ Punkin’ Pots de Crème. Carrino topped the Pots de Crème with a Chantilly Creme made with Saigon Cinnamon and Grand Marnier. The final product was nothing short of a hedonistic gastrome’s autumnal fantasy. With a bit of embarrassment I admit that I could have sat down with a long straw and the pitcher of the uncooked custard and been thoroughly satisfied.

Ryan DePersio & Dinner with the Baristas

Ryan DePersio, owner of Fascino, 331 Bloomfield Ave, Montclair, and Bar Cara, 1099 Broad St., Bloomfield, spent an evening giving the Baristas a cooking lesson.

We worked along side the Chopped Chef as he taught us how to make Ricotta Gnocchi, Sweet Sausage Bolognese and Tuscan Fish Stew.
