Thursday Herbday: Oven Roasted Herb Salmon Recipe

Ingredients:
2 salmon fillets, skin removed
2 tablespoons olive oil
4 tablespoons mixed herbs, minced (Try parsely, dill, basil, thyme, chervil, really anything you have on hand)
2 cloves garlic, minced
Juice of 1 lemon
Salt and black pepper to taste
 
Directions:
Preheat the oven to 425 degrees.
In a bowl, combine the olive oil, mixed herbs, garlic, lemon juice, and salt and pepper, then add your salmon fillets to the bowl and make sure they are coated on all sides.
Place your salmon fillets on a sheet pan covered with foil, and roast in the oven for exactly 8 minutes.
After 8 minutes, remove the salmon and cover the pan tightly with foil, and allow the salmon to rest for 5 minutes. (This lets the heat distribute and keeps the salmon from overcooking and drying out).
When ready to serve, plate the salmon over the mushy peas, top with some fresh minced herbs if you like, and enjoy!

Mushy Peas with Mint:
 
Ingredients:
1 package frozen peas
1 clove of garlic
4 tablespoons olive oil
2 tablsepoons fresh mint, minced
Salt and pepper to taste
 
Directions: 
In a sauté pan, heat olive oil and garlic over low heat. Add the peas, and cook until tender, 3-5 minutes.
Add the mint, season to taste, and mash with a potato masher or purée in a blender or food processor until smooth.
