On October 25th, Bryan Gregg, chef and owner of Escape Montclair, offered a one night, five course "Squash Celebration" menu ($65 pp). After Gregg's signature biscuits and cornbread madeleines, the squash menu proceeded as follows:
First – Pickled butternut, tuna, red Russian
Second – Hubbard, foie, apple, clove
Third – Scallops, acorn, bitter greens
Fourth – Carved pheasant, spaghetti squash, truffle
Fifth – Pumpkin pave, burnt marshmallow, whiskey
